We search far and wide to find coffee beans we enjoy roasting and drinking.     A few of the coffees we are roasting now are from Africa, Central and South America.  We have regular and decaf.  Head over to our shop to pick up a few varieties to add to your roasting line up.

Mexico Chiapas SHG EP

Mexico doesn’t get much spotlight on single origin cafe menus, but that’s not because it’s not high-quality—it’s because we’re just now realizing how incredible these beans can be.   The Chiapas region produces some of the best high-grown coffees in Mexico.   Since its introduction to the Chiapas region at the end of the 19th century, Chiapas has become the major region for coffee cultivation in Mexico.  The Chiapas region borders the Huehuetenango region of Guatemala and the coffees are known to share many similarities.   Chiapas coffee is grown where mountain ranges and jungles give coffee plants the nutrients and altitude they need to produce stellar beans.   Its mountainous highlands and dense rainforest are dotted with Mayan archaeological sites and Spanish colonial towns. The Chiapas mountain region also produces large amounts of bananas and corn.

Uganda Robusta Natural

Coffee is Uganda’s largest export commodity and is worth $550 million annually. Since 85% of all coffee grown is cultivated by smallholders with fewer than 2.5 hectares, Uganda has an immense potential to produce high quality, small lot specialty coffees.   Most coffee grown in Uganda (80%) is of the varietal Robusta (Coffea canephora var. robusta), with the other 20% comprising Arabica varietals.

The coffee trees are intercropped with traditional food crops and grown in the shade of banana trees and other shade trees. In these self-sustaining conditions, coffee is left to grow naturally, flowering on average twice a year.

Special Attibutes of Uganda Robusta Coffee

Robusta coffee originates from Uganda.

High altitude grown (900-1200 MASL), enhances acidity, provides a mild soft sweetness, and a neutral Robusta taste.

Generally cultivated with no application of chemical fertilizers, fungicides or pesticides so it is organic by default.

It has excellent crema properties suitable and ideal for espresso.

Colombia MC Decaf

These beans are large flat beans and some peaberries.

These premium beans are from some of the best farms in Colombia and are from various growing regions including Antioquia, Tolima, Caldas, Valle del Cauca, Huila, Popayan, and Santander.

This coffee has been decaffeinated using the MC Process. This is a blend of premium Arabica beans from some of the best farms in Brazil. These are large 17/18 screen beans. Only the best beans are selected to go through the costly decaffeination process. These beans have been hand screened to remove defects prior to being sent for further processing. The methylene chloride MC process is thought by some in the coffee industry to maintain coffee flavor better than other processes. During the decaffeination process, the coffee beans are soaked in hot water to extract much of the caffeine from the beans. The beans are then removed from the water and the methylene chloride solvent is added to bond with the caffeine. Then the methylene chloride/caffeine compound is removed from the water, and the beans are returned to reabsorb the caffeine free liquid.

Honduras Organic SHG EP

This is an Organic certified, SHG EP grade coffee from the Copan region of western Honduras.  Copán lies in the west of Honduras, bordering Guatemala, and includes the states of Copán, Ocotepeque, and part of Santa Barbara. It has an altitude of 1,200–1,700 m.a.s.l., and some of the widest ranges of humidity and temperature – although, with a low of 11.5 °C, it can also be the coolest producing region in the country.  Here, you can find a sweet-scented coffee with strong notes of chocolate, and citrus. The body tends to be bold and creamy, while the aftertaste is lingering and balanced, with a delicate acidity.   Coffee from Copán is particularly famous in Honduras.   This coffee is from a wet mill in the community of Las Casitas and a dry mill in the community of Jimilile.

CUPPING NOTES: Medium Acidity, Smooth Body, Citrus, Dark Chocolate. Clean and sweet finish.

Brazil Cerrado 17/17 SSFC

These beans are from the Cerrado region of Brazil.  The coffee growing elevations in the Cerrado region average about 850 meters above sea level and the growing areas are huge, providing large quantities of coffee.    

Coffee from the Cerrado region is recognized worldwide for its distinctive flavor and high quality.     

While not necessarily certified as organic, most farmers utilize methods to maximize sustainability and limit negative environmental impacts.   

Brazilian Cerrado coffee is generally very aromatic, clean, with a good body and delicate acidity.   It is well-balanced, and often exhibits a nutty or slightly sweet flavor with lighter roasts, and more chocolaty flavor if given a darker roast.

Ethiopia Sidamo Natural GR. 4

Widely acknowledged as the birthplace of coffee, Ethiopia is highly respected in the specialty coffee industry. Beans from this nation are a staple on coffee shop menus around the world.

Sidamo is one of three trademarked coffee regions in Ethiopia (along with Harrar and Yirgacheffe).

At 1,550 to 2,200 m.a.s.l, Sidamo has ample rainfall, optimum temperatures, and fertile soil. The plants grow naturally thanks to its thick vegetation, healthy soil, and high elevations. Ethiopia provides a warm and tropical climate with moderate wet and dry seasons. Since the climate is ideal, Sidamo plants can be harvested without agricultural chemicals.

Flavor: This classic Ethiopian from Sidamo presents bright acidity, smooth body, very sweet, fruit flavors, hints of strawberry, chocolate, roasted almond, floral, spice, cherry, and green tea. It is complex, clean, with a soft lasting finish.
